DAIQUIRI
The Daiquiri would have to be one of the most iconic classics. It was first created in the 1890’s and Bacardi was first call. Originally the drink was served in a tall glass packed with ice.

INGREDIENTS
– 60mL White Rum (2 oz)
– 30mL Fresh Lime Juice (1 oz)
– 22.5mL Simple Syrup (¾ oz)

METHOD
1. Add the ingredients to your cocktail shaker
2. Shake with ice
3. Strain into a chilled cocktail glass
4. Garnish with a lime wheel

MOJITO
The origins of the Mojito are a little mysterious and some stories go as far back as the 16th century. We’re unsure of it’s true lineage but I know for sure, that it is the perfect refreshing summer cocktail and is a crowd favourite no matter the occasion.

INGREDIENTS
– 60mL White Rum (2 oz)
– 30mL Lime Juice (1 oz)
– 22.5mL Sugar Syrup (¾ oz)
– 6-8 Mint Leaves
– 60mL Soda (2 oz)

METHOD
1. Add mint to the bottom of a high ball glass
2. Add all ingredients except soda
3. Gently press the mint with a muddler
4. Fill with ice and top with soda
5. Stir and garnish with a mint sprig

MAI TAI
This Mai Tai recipe is a slight adaptation on Trader Vic’s recipe from 1944 – excluding the rare and expensive Wray and Nephew rum and upping the curacao in place of the rock candy syrup (which is also known as rich simple syrup – a 2:1 simple syrup).

INGREDIENTS
– 60mL Aged Rum (2 oz)
– 22.5mL Orange Curacao (¾ oz)
– 30mL Fresh Lime Juice (1 oz)
– 15mL Orgeat (½ oz)

METHOD
1. Combine all ingredients into your cocktail shaker
2. Shake with ice
3. Strain over fresh ice into a double old fashioned glass
4. Garnish with a lime wheel

DARK & STORMY
The original trademarked version is held by the Gosling family. It calls for Gosling’s Bermudan rum but any dark rum to accompany a spicy ginger beer will work – just don’t substitute for ginger ale. Apparently many venues that utilise a different rum have had to resort to cleverly renaming the drink to Safe Harbour, in order to avoid litigation from the Gosling’s family.

INGREDIENTS
– 60mL Goslings Dark Rum
– 90mL Ginger Beer
– Lime wedge

METHOD
1. Add ice to your high ball glass
2. Pour the ginger beer ensuring you leave space for the rum
3. Float the dark rum on top
4. Garnish with a lime wedge

THE SALTY BIRD
The Salty Bird is a creation of Lauren Schell of The Everleigh in Australia. Also a former bartender of iconic bars, Milky & Honey and Little Branch. The cocktail is a bittersweet rum laced pineapple sipper.

INGREDIENTS
– 45mL White Rum
– 22.5mL Campari
– 45mL Pineapple Juice
– 15mL Fresh Lime Juice
– 15mL Simple Syrup
– Pinch of salt

METHOD
1. Combine all the ingredients into your cocktail shaker
2. Shake with ice
3. Strain into a high ball or cooler glass
4. Top with crushed ice
5. Garnish with a pineapple wheel and fresh mint
